Mondo barley, also known as Orzo del Faraone or naked barley, is a minor cereal that is very useful in helping maintain biodiversity. The caryopsis of this variety is removed of its palea during threshing and so can be used whole. Different cultivars are used depending on the sowing period, the sowing location (level ground, mountain or coast) and the type of land.
Alce Nero barley is 100% Italian and grown mainly in the hilly areas of Le Marche.
In accordance with organic farming regulations, no synthetic treatments are applied and nothing but organic fertiliser is used so as to prevent soil impoverishment and water pollution.
The barley produced is sown using the rotation method so as not to exploit the soil, and is harvested using the classic mechanical threshing method.
