Quinoa is an annual herbaceous plant of the Chenopodiaceae family, like spinach or beetroot. This grain has a significant history: worshipped by the Incas as a sacred plant for over 5000 years and cultivated on the high plateaus of the Andes at altitudes between 3800 and 4200 metres, it is still the staple food of the Andean peoples today. The root of quinoa is very deep (up to 180 cm) and branched, giving the plant both good stability and drought resistance.
