Quinoa is an annual herbaceous plant from the Amaranthaceae family, like spinach or beetroot. The history of this grain is very important: it was venerated by the Incas as a sacred plant as far back as 5000 years ago and cultivated in the Andes at altitudes ranging from 3,800 to 4,200 metres. Today it is still a staple for populations in the Andes. The quinoa root is very deep (even 180 cm) and ramified, resulting in a stable plant with excellent resistance to drought. Over the last few years this food has been rediscovered, also in the western world, as among other characteristics, it is naturally gluten free.
Alce Nero has chosen Royal Quinoa as it is considered to be the most prized variety. Alce Nero Royal Quinoa is cultivated in Salar de Uyuni in Bolivia, at altitudes of 3,600 metres and above, using methods similar to those of the Incas.
