Spelt is one of the most ancient grains cultivated by mankind and originated in the Fertile Crescent over 5000 years ago. Pliny the Elder defined it as the first food of ancient Lazio.Our spelt wheat belongs to the Triticum Dicoccum genus. The morphological properties of this plant mean that it can be grown on otherwise infertile land, while its significant height ensures it can effectively compete against weeds.

In accordance with organic farming regulations, synthetic chemical products are never used. Instead, organic fertilisers enrich the soul with elements that are useful to the plant.Years ago, Alce Nero began by involving farmers located around its historic base in the Le Marche hills, and then in the hills around Bologna, so as to take advantage of more marginal areas of farmland. This ancient cereal can be grown on stony ground, which is often lacking in nourishing elements. In accordance with organic farming regulations, it should generally follow legumes in terms of crop rotation, so as to exploit the residual soil fertility. Spelt is harvested around mid-July, taking care to avoid breaking the grain with the combine harvester.
