Alce Nero whole khorasan wheat flakes are made from Khorasan wheat cultivated in Italy.

Alce Bio organic 100% Italian whole Khorasan wheat flakes are ideal for breakfast. They are made from Khorasan wheat cultivated in Italy, without any added ingredients. Alce Nero Khorasan wheat flakes are free from added sugar (except for sugars naturally present in Khorasan flour). They are low in fat and naturally rich in fibre as they are made from 100% wholemeal Khorasan. Once harvested and cleaned, Khorasan wheat is steamed using nothing but water.

It is then left to rest, turned into flakes and toasted. Alce Nero wholemeal flakes stay crunchy and are ideal with milk or yoghurt, honey, fresh or dried fruit.

Khorasan wheat is a delicate grain which requires fertile soil and a warm climate in order to achieve satisfactory growth. It has always been grown in the Mediterranean, especially in North Africa, Spain and Italy. Within Italy, it fares particularly well in the regions of Sicily and Puglia. Its significant height (140-160 cm) and precocity ensures it can effectively compete against weeds. The caryopsis, larger than other grains and long and thin in shape, can grow up to 11-12 mm long and 3 mm wide.

Only wheat grown in Italy is used to produce the khorasan wheat flakes.

Khorasan wheat requires the same cultivation technique as wheat. It enjoys the residual fertility of previous crops and favours ventilated areas at mid to high altitude.In terms of crop rotation, it occupies the same position as wheat, following on from favino fallow land or tomatoes. It is harvested around mid-July.
