The Alce Nero organic extra virgin olive is produced exclusively from native organic cultivars that are more resistant to unfavourable climatic conditions and weeds. The olives are Italian cultivars including Coratina, Ogliarola and Carolea, which result in an oil with a light fruity flavour.
The olives used to produce Alce Nero extra virgin olive oil come from areas of Italy characterised by mild winters and hot summers, cultivated in accordance with organic regulations by around 160 olive grower members.The olives are harvested manually and with the help of mechanical facilitators to minimise the damage that the fruit may suffer. After harvesting, the olives are taken to the oil mill and the production process begins, making olives into oil, thanks to the cold extraction technique.
