DURATION 30-60 Minutes DIFFICULTY Medium Pea burger and creamy egg INGREDIENTSfor 4 people 500g Alce Nero organic boiled peas 3 fresh onions 140g Alce Nero organic rice flour 2 egg whites and 4 Alce Nero fresh organic eggs 3 Alce Nero creamy organic Hass avocados 1 spoon Alce Nero organic lemon juice Alce Nero organic extra virgin olive oil Salt and pepper METHODFinely slice the fresh onions, including the green tops and sauté in a pan with a drizzle of oil and a little water. Thoroughly drain and dry the peas and add to the pan.Place everything in a mixer and intermittently blend with the egg whites, rice flour and a generous pinch of salt and pepper.Heat a drizzle of oil in a non-stick pan and use an ice cream scoop to create portions; flatten the balls into patties. There should be enough to make 8 fritters.Peel and stone the avocados then mash with a fork and season with the lemon juice, a drizzle of oil and salt.Boil the four eggs for 6 minutes from when water comes to the boil then immediately place them in cold water to stop cooking.Place a pea fritter on a plate, add some avocado cream and then place another fritter on top, along with a peeled boiled egg cut in half.
