DURATION 30-60 Minutes DIFFICULTY Medium Legume falafel INGREDIENTSfor 4 people 160g Alce Nero organic boiled peas 400g Alce Nero organic boiled chickpeas 2 garlic cloves 10g mint leaves 10g chives pinch of 5 spice powder Grated rind of half a lemon 8g yeast for savoury pies 35g Alce Nero organic "0" type soft wheat flour 75g sesame seeds Salt Peanut oil for frying METHODThoroughly drain the chickpeas and peas and blend in a mixer. Add the garlic, mint leaves, spices, lemon rind, yeast, flour and a pinch of salt. Blend to obtain a smooth mixture. Use a spoon to remove the mixture and shape into balls; roll each one in the sesame seeds. Heat abundant oil and fry the falafel until crisp and golden. Place onto absorbant paper and serve with a mixed vegetable relish.
