Thoroughly drain the chickpeas and peas and blend in a mixer. Add the garlic, mint leaves, spices, lemon rind, yeast, flour and a pinch of salt. Blend to obtain a smooth mixture.
Use a spoon to remove the mixture and shape into balls; roll each one in the sesame seeds. Heat abundant oil and fry the falafel until crisp and golden.
Place onto absorbant paper and serve with a mixed vegetable relish.
