Gravina di Puglia – Maria Desiante grows organic Italian wheat, grains and ancient grains, including the precious Cappelli variety. Cappelli durum wheat is more difficult to grow, with stalks reaching a height of one and a half metres, topped by a magnificent characteristic 'moustache'. Despite being more vulnerable to weather conditions, its long roots enable it to source all the nourishment it needs from the soil. It is used to produce a range of different pastas.
Maria Desiante became a farmer at the age of 22, when upon suffering a bereavement in the family, she decided to drop her pharmaceutical studies at university and dedicate herself to the land, on the family farm. In 2005 she began the organic conversion process of her lands. The transition lasted 2 years, proving to be an ethical and sustainable challenge. Now her dream is to spread the culture of organic production, initially among other farmers and then to new generations.
