This product is made using 100% Italian, organic artichokes, cultivated in areas of Italy which are most suited.

Artichokes are harvested and selected to obtain the hearts which are then cut into slices and lightly cooked to stop the oxidisation process. The slices are frozen and then packaged in as little time as possible to preserve the freshness of the original product as much as possible.

Alce Nero artichoke heart slices are very compact, light green in colour, extremely tender, delicious and naturally rich in fibre. They are an ideal ingredient for delicious purée soups, first courses and savoury pies, or as a simple and delicious garnish. Alce Nero artichokes come in a 100% compostable bag, recyclable as organic waste.

The artichoke (Cynara scolymus L.) is a perennial herbaceous plant that grows up to 1.5 metres in height. The flowers are clustered in a head (also known as a calathid). The softest part of the artichoke is the base of the flower, commonly known as the heart.

The natural cycle of the artichoke is autumn-spring, with the first heads appearing towards the end of winter, from February onwards.

Once the artichokes are harvested and washed, the hearts are removed, cut into slices and lightly cooked to stop the oxidisation process. They are then frozen and packaged. All of this is done as quickly as possible, to preserve the properties of the original product.
